Freekeh: The Best Grain You’ve Never Tasted

Who has tasted Freekeh? It is a very old grain, like farro, that is also very good for you (like farro). It is green wheat that has gone through a roasting process.   It is high in protein, insoluble fiber, has a low glycemic index and is tasty, to boot. Freekeh can be prepared like rice, or most other whole grains, and used in similar recipes. It has a nice bite to it, and slightly nutty taste. You can find it in the bin foods section of some grocery or health foods stores, or pre-packaged (harder to find, I think). What’s not to like, right?

I prepared the Freekeh on Saturday and we had it for lunch on Sunday.  I decided on a Freekeh Pilaf, which is a traditional preparation. I added cherry tomatoes  because I had picked up the sweetest, juiciest yellow cherry tomatoes EVER from Wolfe Spring Farm.

They were like little jewels, so I used them as the “fruit” in this pilaf recipe to add sweetness and moisture. If you don’t have sweet tomatoes, no worries. Just add some chopped dried fruit. I riffed on this recipe from the This is How I Cook blog that I found over the weekend. This was a big crowd-pleaser.

Ingredients:

2 tablespoons olive oil
1 small red onion,  chopped
1 clove garlic, chopped
1 jalapeno pepper, diced and seeded
1 handful walnuts, chopped (or pistachios or almonds)
1c freekeh
2c vegetable broth
Salt and pepper to taste
1/2t cumin
1/2 cup cherry tomatoes, halved (optional)
1/4 cup dried apricots, chopped  (optional)
Fresh parsley to garnish (or cilantro or mint)
Instructions:
Saute the onion, garlic, and jalapeno pepper  in olive oil. When they start to sweat (about 5 min), stir in the nuts. Brown them just a little. Stir in the freekeh. Let cook a minute. Stir in broth. Bring to a boil and then turn down to simmer. Cover. Check after about 20 minutes. It should be done but if you want it softer add a bit more liquid and cook a little longer.

Freekeh Pilaf

Season with salt and pepper and garnish with parsley (or cilantro or mint – whatever you have on hand). Add chopped tomatoes and/or dried apricots, if available. Think of this as any pilaf recipe because all you have to do is substitute the grain. Serve warm or at room temperature.

Monday Night Dinner: A Day Late, but Still Worth Talking About

I made an easy-peasy salmon recipe last night that’s definitely worth sharing. It’s from Cooking Light  – Salmon with Roasted Tomatoes. Minimal prep time, and delicious outcome. The only con is that you do have to use your oven, which can be a downer on a summer night.

What I love about this recipe is that you don’t even have to halve the tomatoes. Wash and dry them, toss with some olive oil, garlic cloves, thyme and salt and pepper. Done! The recipe tells you to mince the garlic, but I simplified it further by leaving the garlic cloves whole and smashing them. I also added a quartered hothouse tomato simply because I had it on hand. All tomatoes and garlic were from my CSA Pick-up on Saturday. This week’s tomatoes are done and done.

All this and more! Wow, I felt exhausted and excited just looking at this list. And then I spied a basket of small, shiny green peppers. I chatted with June and mentioned that there was so much included in this week’s pick-up that she didn’t bother with the peppers even. She feared members would have my reaction! But when I told her I was thinking about gazpacho, she kindly offered to pick a few cucumbers for me and said to help myself the peppers, too. So nice! Thank you, June!

It’s Thursday and do you know what’s Left in your CSA Basket?

Our CSA Pick-up day is Saturday and I’m usually out of food, ideas and energy for creative home cooking by Thursday night. Quick review of this week’s recipes:

But I’ve still got a few usable and useful items left, so it’s back to work tonight. I have the following left:

  • 1/3 quart cherry tomatoes – dinner tonight
  • Shallots and Garlic- dinner tonight,and these will last, so no hurry
  • Zucchini – have plans for zucchini bread this weekend, so sit tight
  • 1/2 head of cabbage – I’m out of ideas for you, cabbage head
  • 1 ear of early drought corn – Sam was going to eat for dinner, but the crazy rows look uninviting

Krazy Korn from CSA Pick-up 7/28/12

We’ll have Salmon en Papillote and a green salad for dinner tonight. As I wrote in an earlier post, fish en Papillote is a simple to prepare dish for the kitchen weary. I’ll use the cherry tomatoes and shallots from my CSA pick-up, and then we’re ready again for Saturday’s stash.
