“There are no original ideas….”

is the perfect lead-in for this post. I’ve been itching to try Dan’s Baba Ghanoush recipe since he mentioned it a few weeks ago in his post. I picked up 3 beautiful Sicilian eggplants on Saturday at the Farm and had them earmarked for the Babah, as Dan calls it.

I had hoped to prepare them on the grill to ensure the yummy smokiness Dan wrote about. But alas the weather did not cooperate with said plan and I wound up roasting them in the oven. I will readily admit that I am NOT experienced with eggplant prep, so I had to do some research in addition to following Dan’s recipe. Eggplant and I are not simpatico.

You hear a lot about bitterness in eggplants, and the need to salt and/or drain them as part of the preparation process. Large seeds are typically an indicator of bitterness. Since these eggplants were super fresh and had small seeds (see photo above), I chose to skip salting and draining them. I lined a baking sheet with foil, and rubbed it with a small amount of olive oil. For the eggplants, I cut off the tops and sliced them in half, scored the flesh side, placed them on the baking sheet and roasted at 475F for about 35-40 minutes.

I let the eggplants cool and then followed the recipe from Claudia Roden’s  “The New Book Of Middle Eastern Cooking.” I wound up doubling the recipe because I had about 4 pounds of eggplant. As an aside, I felt quite diligent because I used my recently purchased Escali scale to weight them in advance. Handy purchase.

Verdict: Very tasty eggplant dish, absolutely no bitterness, so good call not to salt/drain.

But I didn’t achieve the much-desired smokiness that comes with grilling. I read on The Shiksa’s blog that you CAN achieve that smokiness in the oven if you roast a few minutes longer than you think you need to. Must try that next time. Eggplant and I will become BFF.

With a bounty of Kirby cucumbers, what can you do but pickle?

All I can say is, it’s good to have a partner in this endeavor. And I was fortunate to have two: Hubs and my Cuisinart. No, Hubs is not in same category as Cuisinart, but you know what I mean. I had never made pickles before, so this was an adventure indeed. We decided on Bread & Butter Pickles for a few reasons:

  1. Hubs loves them
  2.  Can be made “refrigerator-style,” like Dan’s awesome pickled string beans. No need for serious canning experience, of which I have none
  3. Good value! We’ve been buying jars of these at the green market for $6 or $7

Truth be told, Hubs has got me hooked on these Bread & Butter Pickles, too. I am used to traditional sour dill pickles (maybe even a half-sour), which are the kind I grew up on.

We’d go downtown to the Lower East Side with my grandmother and buy them out of the barrel at Gus’s, back when the LES was still populated by discount merchants and Jewish delicatessens, not hipsters and cocktail bars.

Here’s what we did: We worked off of 2 recipes we found online: borrowing ingredients from Smitten Kitchen’s blog and  and technique from an old-school recipe on  A Way to Garden. I liked the fact that Smitten Kitchen used about 1/2 the sugar used in the old-school recipe. And, skipping to the chase, you would never know. These pickles are sweet and succulent at the same time; you’d never think they needed more sugar.

Ingredients: 

4 pounds cucumbers, sliced 1/4-inch thick — “pickling” or kirby cucumbers work best here
4 bell peppers sliced lengthwise [ok to omit if you don’t have them on hand]
3 large onions, thinly sliced
1cup Diamond Kosher salt [Updated: Why Diamond? Read this first.]
2 cups sugar (1/2 cup per pound of cucumbers)
1 1/2 cup distilled white vinegar [Original recipe calls for less, but we were low on liquid, so I’d recommend more]
1 1/2 cup apple cider vinegar
1 teaspoon ground turmeric
4 tablespoon mustard seeds
4 tablespoon coriander seeds (if ground, use 1 teaspoon)
1 teaspoon celery seed

Instructions:

Use Cuisinart or mandoline to slice cucumbers and onions. It is definitely a time saver and worth the extra time afterwards  to wash all the piece parts of the equipment.

In a very large bowl, combine the cucumbers, peppers, onion and salt. Mix well. Cover the mixture with ice. Let stand at room temperature for two hours. In a large pot, bring sugar, vinegar and spices to a boil. Drain cucumbers and onions. Add to vinegar mixture and bring back to a boil.

Simmer for 5 minutes, then ladle them (with the liquid) into clean jars. Be careful as you are ladling boiling hot liquid into the jars. Hubs was particularly helpful in this step. As the jars cool, you should hear the light “pop” of the seal vacuuming tight. Once cooled, keep them in the fridge. They will keep quite well for six months or so.

Yield: 14 1/2 pint jars. Of course, I mis-placed a lid from one of the Ball glass jars at the end of the process and had to use an old jam container. Ah well.

A Very First World Problem: Veggie Overload CSA Pick-up 9/8/12

Height of the season and everything is looking gorgeous. Generous June says to take as many tomatoes, cukes, eggplants, potatoes, onions, garlic and jalapeños as we can carry. Check it out

Life is Good

I was fortunate enough to be asked to pickup another great haul from Wolfe Spring Farm this Labor Day weekend. It was a lovely bounty with awesome produce. Unfortunately, our house guests happened to get in the way of me photographing and blogging everything we did with the food. So……It started with a margarita made with fresh watermelon juice and WSF jalapeños. Its a delicious summer drink. After two of those I forgot all about the blog so don’t have any pics of that evening. Then, we made an awesome tomato salad with some fresh mozzarella, WSF tomatoes and some micro greens from Zinks farm down the road. Drizzle some white balsamic vinegar, olive oil, salt, pepper and that’s it! Next, I made an improvised ratatouille with the WSF eggplant, peppers, onions, garlic, tomatoes, basil, and a few other things. It came out really well and will be my lunch for the next few days. Perhaps I’ll add some chick peas.

Watermelon Jalapeño Margarita

Make some fresh watermelon juice. Muddle a jalapeño pepper or two in a cocktail shaker. Add lots of ice. Put in a splash of lime juice (about a half lime per serving) add tequila (we used Patron Silver because its so clean tasting and complements the watermelon but a smokier liquor could be interesting) and watermelon juice to your taste. Shake and serve up or over ice. Since I don’t have a pic, you’ll have to take my word for it – it was gorgeous to behold and drink.

Multitasking

While Paul, Debra, and Sam are glamming it up on the continent, we’re keeping it real here down on the farm. A few fat eggplants challenged us to make some baba ganoush. Could we get any where near the smoky deliciousness of Fatoosh on Hicks Street in Brooklyn? We were willing to humiliate ourselves trying so………….I’m usually a Jamie Oliver throw-it-all-together-and-see-what-happens kind of guy but Baba ganoush mystified me. I knew it was a roasted eggplant dip with garlic and lemon but that was it. So, I turned to the New Book of Middle Eastern Food by Claudia Roden. This book has inspired me many times. She had a great recipe for baba ganoush which I’ll get to later. We through the eggplant on the grille. While we had the grill going, I put some garlic in to roast and, why not?, some edamame to see what would happen. Toss it with salt and pepper and roast it (rather than steam it) OMFG – so delicious. It took on some of the smoke of the eggplant and was magnificent. I bet they don’t do THAT in Ittly……….

An Embarrassment of Riches

Take a look at this awesome haul from Wolfe Spring Farm! Organic corn, eggplant, string beans, garlic, tomatoes, red cabbage, jalapeños, zucchini, bell peppers, fingerling potatoes, edamame, and beautiful sunflowers. Thanks so much to Paul and Debra for letting us pick up their CSA produce while they are on jury duty.  While at the farm, we had a nice chat with Jim, who told us that they had naturally raised chickens for sale. We bought two. Stay tuned for what we do with all this gorgeous produce. Thanks!

Pizza for Breakfast?

I don’t think I’m the only one who loves a slice of leftover pizza for breakfast. What about a fresh, grilled pizza for breakfast? The thick meaty tomatoes from Wolfe Spring Farm prompted us to give it a try. Our weekend guest had brought a few cheeses. A buratta which we used on our bruschetta and a nice fresh mozzarella from Murray’s in Grand Central Terminal. Tomatoes, mozzarella? Fresh basil in the garden? Caprese salad? No, PIZZA! We had two crusts from Berkshire Mountain Bakery in the freezer and did this: Sliced the tomatoes, pushed out most of the seeds, salted them and let them drain for an hour or so in the sun. They got nice and tender and dried out a bit. Fortunately, I had roasted some garlic this week so we smeared a few cloves of roasted garlic on each crust, then rubbed some olive oil on them too. Sliced and layered on the mozzarella. ;aye red on the cheese, added a little salt and lots of freshly found black pepper, and grilled the whole thing for about 15 minutes. Then, we sprinkled one of them with fresh basil from the garden, and the other one with basil, fresh chopped oregano and some nasturtium flowers. I have to admit, the nasturtium flowers were for looks. Even though they are edible and have a delicate peppery taste, it was unnecessary and, frankly, weird. The pizza had a delicious blackened crust and a simple earthy taste from the garlic, tomatoes and cheese. Tonight, we’ll have leftover breakfast pizza for dinner!
